  • 1.5 cup Gluten-Free Flour
  • 1 cup Shredded Coconut
  • 0.5 cup Prunes, chopped
  • 0.25 cup Coconut Oil, melted
  • 0.25 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the gluten-free flour, shredded coconut, chopped prunes, baking powder, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
  6. Flatten each cookie slightly with the back of a spoon.
