  • 100 gram Carrots
  • 100 gram Zucchini
  • 200 gram Gluten-free flour blend
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 4 tablespoon Coconut oil
  • 4 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 100 gram Dark chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C). Grate the carrots and zucchini.
  2. In a large mixing bowl, combine the grated carrots, zucchini, gluten-free flour blend, cocoa powder, baking powder, and salt.
  3. In a separate small bowl, whisk together the coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix well until a dough forms.
  5. Fold in the dark chocolate chips.
  6. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.
  7. Bake for 12 minutes or until the edges are set.
