Ingredients
  • 2 cup Acorn Squash
  • 1 cup Pecans
  • 2 tablespoon Maple Syrup
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Slice the acorn squash into rings, approximately 1/2 inch thick.
  3. Remove the seeds and strings from the center of each ring.
  4. In a small bowl, mix together maple syrup, olive oil, cinnamon, and salt.
  5. Brush the mixture onto both sides of the squash rings.
  6. Place the rings on a baking sheet lined with parchment paper.
  7. Sprinkle pecans on top of each ring.
  8. Bake for 25-30 minutes, or until the squash is tender and the pecans are toasted.
  9. Remove from the oven and let rest for 5 minutes before serving.
