  1. Rinse the lentils under cold water and set aside.
  2. Chop the carrots, onion, garlic, and celery.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the chopped vegetables and sauté for 5 minutes.
  5. Add cumin powder, paprika, turmeric powder, salt, and black pepper. Stir well.
  6. Add the rinsed lentils and vegetable broth. Bring to a boil.
  7. Reduce heat, cover the pot, and simmer for 30 minutes or until lentils are tender.
  8. Remove from heat and let it rest for 10 minutes.
  9. Serve hot, garnished with fresh parsley and lemon wedges.
