Garlic Lentil Soup
Lentils are one of the oldest cultivated crops and have been eaten for thousands of years.

Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add garlic, onion, carrots, and celery. Cook until vegetables are tender.

Add lentils, vegetable broth, bay leaf, salt, black pepper, paprika, and cumin. Bring to a boil.

Reduce heat and simmer for 20-25 minutes, or until lentils are cooked.

Remove bay leaf and stir in fresh parsley and lemon juice.
