Ingredients
  • 2 cup Garbanzo Beans
  • 1 medium Fennel Bulb
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 2 tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
  • 1 tablespoon Lemon Juice
Instructions
  1. Soak the garbanzo beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion and garlic, sauté until fragrant.
  5. Add fennel bulb, smoked paprika, and ground cumin. Cook for 5 minutes.
  6. Add the soaked garbanzo beans and vegetable broth.
  7. Season with salt and black pepper.
  8. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  9. Remove from heat and let it rest for 5 minutes.
  10. Stir in fresh parsley and lemon juice.
  11. Serve hot.
