Garbanzo beans, also known as chickpeas, are one of the oldest cultivated crops and have been a staple in Mediterranean and Middle Eastern cuisines for thousands of years.

Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Stir in tomato paste, cumin, paprika, salt, and black pepper. Cook for another 2 minutes.

Add garbanzo beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let the soup rest for 5 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in lemon juice and adjust seasoning if needed.

Serve hot, garnished with fresh parsley.
