Fried Vermicelli
Fried Vermicelli, also known as Singapore Noodles, is a popular dish in Southeast Asian cuisine but is not actually from Singapore. It was created by Chinese immigrants in Southeast Asia and has become a favorite in Chinese and Singaporean restaurants worldwide.
This is vegan recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Cook the vermicelli according to package instructions. Drain and set aside.

Heat vegetable oil in a wok or large pan over medium heat. Add minced garlic and sliced onion, and stir-fry until fragrant.

Add sliced carrot, capsicum, and shredded cabbage to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

Push the vegetables to one side of the wok and add the cooked vermicelli to the empty space. Pour soy sauce over the vermicelli and toss everything together.

Season with salt and black pepper, and continue stir-frying for another 2-3 minutes until the vermicelli is heated through.

Garnish with chopped spring onions and squeeze lime juice over the dish.
