Apricots are believed to have originated in China over 4,000 years ago and were brought to the Middle East by Alexander the Great.

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Soak the dried apricots in warm water for 10 minutes, then drain and chop them into small pieces.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  4. Add the cinnamon, cumin, and salt to the pot and cook for another minute.
  5. Add the rice, chopped apricots, almonds, and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove the pot from the heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
