  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are tender, about 5 minutes.
  2. Add all the beans, vegetable broth, diced tomatoes, dried thyme, dried oregano, bay leaves, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Remove bay leaves and discard. Use an immersion blender to partially blend the soup, leaving some beans whole for texture.
  4. Serve hot, garnished with fresh parsley.
