Fat Free, Dairy Free and Delicious Sweet Potato Bread
Sweet potatoes are a great source of dietary fiber and are rich in vitamins A and C.

Preheat the oven to 350°F (175°C).

Pierce the sweet potatoes with a fork and bake them for 45-50 minutes until tender. Let them cool.

Peel the sweet potatoes and mash them in a bowl.

In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

Add the mashed sweet potatoes, coconut oil, maple syrup, almond milk, and vanilla extract to the dry ingredients. Mix well until all the ingredients are combined.

Grease a loaf pan and pour the batter into it.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Slice and serve.
