  • 1 cup Farro
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 0.5 cup Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 0.25 cup Lemon juice
  • 0.25 cup Extra virgin olive oil
  • 0.5 cup Pine nuts
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Cook the farro according to package instructions.
  2. In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, parsley, mint, lemon juice, olive oil, pine nuts, salt, and black pepper.
