  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  2. Add tomato paste, dried thyme, paprika, bay leaf, salt, and black pepper. Stir well.
  3. Add kidney beans and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes, or until beans are tender.
  5. Remove bay leaf. Use an immersion blender or a regular blender to puree the soup until smooth.
  6. Serve hot, garnished with fresh parsley.
