Preheat the oven to 400°F (200°C).

Slice the eggplant into 1/2-inch thick rounds.

Brush both sides of the eggplant slices with olive oil and place them on a baking sheet.

Bake for 15 minutes, then flip the slices and bake for another 10-15 minutes until golden brown.

In a separate pan, sauté the garlic, onion, and tomatoes until softened.

Season with salt, pepper, and basil.
