  2. Slice the eggplant into 1/2-inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet.
  4. Bake for 15 minutes, then flip the slices and bake for another 10-15 minutes until golden brown.
  5. In a separate pan, sauté the garlic, onion, and tomatoes until softened.
  6. Season with salt, pepper, and basil.
  7. Serve the roasted eggplant slices topped with the tomato mixture. Enjoy!
