Ingredients
  • 300 gram Spinach
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Potato
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 2 sprig Rosemary
  • 4 slice Bread
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer until the potato is tender.
  3. Stir in the spinach and cook until wilted.
  4. Meanwhile, preheat the oven to 350°F (175°C). Place the bread slices on a baking sheet and brush with olive oil. Sprinkle with chopped rosemary.
  5. Bake the bread slices for about 10 minutes, or until golden and crispy.
  6. Remove the soup from heat and let it cool slightly. Then, blend the soup until smooth using an immersion blender or a regular blender.
  7. Serve the soup hot, topped with the rosemary croutons.
