Easy Minestrone
Minestrone is a traditional Italian soup that dates back to ancient Rome. It was originally made with whatever vegetables were in season and often included leftovers from previous meals.

Heat olive oil in a large pot over medium heat.

Add onion, carrot, celery, and garlic. Sauté until vegetables are tender.

Add vegetable broth, diced tomatoes, tomato paste, cannellini beans, zucchini, green beans, and dried herbs.

Season with salt and black pepper.

Bring to a boil, then reduce heat and simmer for 20 minutes.

Add pasta and cook until al dente.
