Bamboo rice is a traditional dish from the Yunnan province of China. It gets its name from the vibrant green color that the rice acquires from being cooked with fresh bamboo shoots.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 8.

Rinse the rice thoroughly and soak it in water for 15 minutes.

Drain the bamboo shoots and chop them into small pieces.

Heat sesame oil in a pan and add the chopped bamboo shoots, carrots, and green peas. Stir-fry for 2-3 minutes.

Drain the soaked rice and add it to the pan. Stir-fry for another 2 minutes.

Add water (5 cups for every cup of rice) and salt. Cover and cook on low heat for 15-20 minutes or until the rice is cooked.

Once the rice is cooked, remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and drizzle soy sauce over it. Mix well.

Garnish with chopped spring onions and serve hot.
