Preheat the oven to 350°F (175°C).

Peel and dice the sweet potatoes.

In a large pot, boil the sweet potatoes until soft.

Add coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and cornstarch to the mashed sweet potatoes. Mix well.
