Rinse the quinoa under cold water.

In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the water is absorbed.

Meanwhile, dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and roughly chop the fresh parsley.

In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa salad and toss to combine.
