Ingredients
  • 2 cup Split peas
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 2 medium Potatoes
  • 1 link Smoked sausage
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 6 cup Water
Instructions
  1. Rinse the split peas and set aside.
  2. In a large pot, sauté the onion, carrots, and celery until softened.
  3. Add the split peas, potatoes, smoked sausage, bay leaves, thyme, salt, pepper, and water to the pot.
  4. Bring to a boil, then reduce heat and simmer for 5 hours, or until the split peas are tender.
  5. Remove the bay leaves and smoked sausage from the pot. Slice the sausage and return it to the pot.
  6. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  7. Let the soup rest for 10 minutes before serving.
  8. Serve hot and enjoy!
