Boil the potatoes until they are tender. Peel and prick them with a fork.

Heat oil in a pan and fry the boiled potatoes until they turn golden brown. Remove and keep aside.

In the same pan, add chopped onion and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add coconut milk and bring it to a boil.

Add fried potatoes and simmer for 10 minutes.
