Gingerbread has been a popular treat since ancient times and was traditionally used for medicinal purposes.

Preheat the oven to 350°F (175°C). Grease a baking dish.

In a large bowl, whisk together the whole wheat flour, baking powder, ginger, cinnamon, nutmeg, and salt.

In another bowl, mix together the applesauce, molasses, honey, almond milk, vanilla extract, coconut oil, chia seeds, and water.

Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

Pour the batter into the prepared baking dish and smooth the top.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the dish for 10 minutes.

Transfer to a wire rack and let it cool completely.

Cut into squares and serve.
