Ingredients
  • 1 cup Lentils
  • 1 cup Rice
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Salt
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils and rice separately.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic, sauté until golden brown.
  4. Add cumin, coriander, and salt, stir for a minute.
  5. Add lentils and vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Add rice and continue simmering for another 10 minutes or until rice is cooked.
  8. Remove from heat and let it rest for 5 minutes.
  9. Fluff the lentils and rice with a fork.
  10. Drizzle with lemon juice and garnish with fresh parsley.
  11. Serve hot and enjoy!
