Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

Grate the zucchini and squeeze out excess moisture.

In a large bowl, combine the grated zucchini, all-purpose flour, baking powder, baking soda, cinnamon, salt, and brown sugar.

In a separate bowl, mix together the vegetable oil, unsweetened applesauce, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until just combined.

Fold in the chopped walnuts and raisins.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
