Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the pumpkin is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in coconut milk. Season with salt and black pepper.

Simmer for another 5 minutes to allow the flavors to blend.

Serve hot, garnished with chopped parsley.
