Ingredients
  • 2 cup Winter squash
  • 2 teaspoon Curry powder
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Coconut milk
  • 1 cup Vegetable broth
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the winter squash into cubes.
  2. In a bowl, mix together curry powder, cumin, coriander, turmeric, salt, and black pepper.
  3. Toss the winter squash cubes with the spice mixture until evenly coated.
  4. Place the coated squash on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  5. In a large saucepan, heat coconut milk and vegetable broth over medium heat.
  6. Add minced garlic and ginger to the saucepan and cook for 2-3 minutes.
  7. Add the roasted squash to the saucepan and simmer for 5 minutes.
  8. Stir in lime juice and garnish with fresh cilantro.
  9. Serve hot and enjoy!
