Heat oil in a large pot and sauté onions, garlic, and ginger until fragrant.

Add carrots and curry powder, and cook for 5 minutes.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes, or until carrots are tender.

Use an immersion blender or transfer the soup to a blender and blend until smooth.

Stir in coconut milk, salt, and black pepper. Cook for an additional 5 minutes.

Serve hot, garnished with cilantro.
