  1. Press tofu to remove excess water.
  2. Cut tofu into cubes.
  3. Heat vegetable oil in a pan.
  4. Add onion, garlic, and ginger. Sauté until fragrant.
  5. Add curry powder and stir-fry for 1 minute.
  6. Add tofu cubes and cook until lightly browned.
  7. Pour in coconut milk and simmer for 10 minutes.
  8. Season with salt and pepper.
  9. Add watercress and cook for another 2 minutes.
  10. Serve hot over rice or noodles.
