Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.

Add curry powder and cook for another minute.

Add potatoes, edamame, lentils, vegetable broth, coconut milk, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes or until potatoes are tender.

Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.

Stir in lime juice and cilantro.

Let the soup rest for 5 minutes before serving.
