  1. Heat oil in a large pan. Add chopped onion, minced garlic, and grated ginger. Saute until fragrant.
  2. Add curry powder, turmeric powder, and cumin powder. Stir well.
  3. Add chopped bell pepper, carrot, cauliflower, and frozen peas. Cook for 5 minutes.
  4. Drain and rinse chickpeas. Add them to the pan.
  5. Pour in coconut milk and season with salt and black pepper. Simmer for 15 minutes.
  6. Garnish with chopped cilantro and serve with lime wedges.
