Curried Chickpeas and Tofu
Chickpeas, also known as garbanzo beans, are one of the oldest cultivated crops and have been consumed for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Drain and rinse the chickpeas. Cut the tofu into cubes.

Heat cooking oil in a pan over medium heat. Sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well.

Stir in the tomato paste and cook for another minute.

Add the chickpeas, tofu, coconut milk, salt, and black pepper. Simmer for 15-20 minutes.

Remove from heat and let it rest for 10 minutes.

Garnish with fresh cilantro before serving.
