Curried Cauliflower Couscous
Cauliflower couscous is a healthy and low-carb alternative to traditional couscous made from wheat.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 400°F (200°C). Cut the cauliflower into florets.

Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20 minutes.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the curry powder and cook for another minute.

Add the couscous and vegetable broth to the skillet. Stir well, cover, and let it simmer for 5 minutes.

Remove the skillet from heat and let it rest for 5 minutes.

Fluff the couscous with a fork and add the roasted cauliflower, raisins, almonds, and fresh cilantro. Mix well.
