Ingredients
  • 500 gram Butternut Squash
  • 2 piece Apple
  • 1 piece Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 cup Coconut Milk
  • 2 cup Vegetable Stock
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
  2. Add curry powder and stir for a minute.
  3. Add butternut squash, apple, vegetable stock, coconut milk, salt, and black pepper. Bring to a boil, then reduce heat and simmer until the squash is tender.
  4. Remove from heat and let it rest for 10 minutes.
  5. Serve hot, garnished with cilantro.
