  1. Heat oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add butternut squash, apple, and curry powder. Cook for 5 minutes, stirring occasionally.
  3. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes, or until squash is tender.
  4. Remove from heat and let it cool slightly.
  5. Using an immersion blender, blend the soup until smooth.
  6. Return the pot to low heat, stir in coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
