Ingredients
  • 500 gram Leeks
  • 400 gram Potatoes
  • 200 gram Carrots
  • 2 teaspoon Olive Oil
  • 2 cup Vegetable Stock
  • 1 piece Bay Leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoon Parsley
Instructions
  1. Wash and chop the leeks, potatoes, and carrots.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the leeks and sauté until softened.
  4. Add the potatoes, carrots, vegetable stock, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the vegetables are tender.
  6. Remove the bay leaf and blend the stew using an immersion blender until smooth.
  7. Let the stew rest for 10 minutes before serving.
