  • 2 pound Red Skinned Potatoes
  • 4 clove Garlic Cloves
  • 2 tablespoon Dijon Mustard
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the red skinned potatoes into bite-sized pieces.
  3. In a large bowl, combine the garlic cloves, Dijon mustard, olive oil, salt, and black pepper.
