  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add carrots and potatoes, and cook for 5 minutes.
  3. Add vegetable broth, cumin, salt, and black pepper. Bring to a boil and then reduce heat to low. Simmer for 15-20 minutes, or until vegetables are tender.
  4. Remove from heat and let the soup cool slightly. Then, using an immersion blender or regular blender, blend the soup until smooth.
  5. Return the soup to the pot and stir in tahini, lemon juice, and fresh parsley. Heat over low heat for another 5 minutes.
  6. Serve hot and garnish with additional parsley if desired.
