Ingredients
  • 4 stalks Celery
  • 4 medium Potatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 4 cups Vegetable Stock
  • 2 sprigs Thyme
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • For garnish chopped Fresh Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  2. Add vegetable stock, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
  3. Remove thyme sprigs and bay leaf. Use an immersion blender to puree the soup until smooth.
  4. Serve hot, garnished with fresh parsley.
