Ingredients
  • 2 can Tomatoes
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sugar
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Add the canned tomatoes (with juice), vegetable broth, salt, black pepper, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let it cool slightly. Blend the soup in batches until smooth using a blender or immersion blender.
  4. Return the soup to the pot and reheat if necessary. Stir in chopped fresh basil leaves.
  5. Serve hot and garnish with additional basil leaves if desired.
