  3. Add cooked rice, raisins, mixed nuts, lemon juice, salt, and black pepper. Mix well and cook for 2 minutes.
  4. Place a collard green leaf on a flat surface. Spoon a portion of the filling onto the leaf and roll it up like a burrito.
  5. Place the stuffed collard greens in a baking dish. Pour vegetable stock over the top.
  6. Bake at 350°F (175°C) for 30-35 minutes until heated through.
  7. Remove from the oven and let it rest for 10 minutes.
