Wash and chop the collard greens.

Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic to the pot and sauté until fragrant.

Add collard greens to the pot and cook until wilted.

Drain and rinse the white beans, then add them to the pot.

Pour in vegetable broth and season with salt, black pepper, and crushed red pepper flakes.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes.

Remove from heat and let it rest for 5 minutes before serving.
