In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, peanut butter, honey, minced garlic, and grated ginger to make the sauce.

Thinly slice the green onions and cucumber.

In a large mixing bowl, combine the cooked noodles, sauce, green onions, and cucumber. Toss well to coat.
