Rinse quinoa under cold water.

In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.

Remove from heat and let it rest for 5 minutes. Fluff with a fork.

In a large bowl, combine cooked quinoa, fresh mint leaves, almonds, craisins, olive oil, lemon juice, salt, and black pepper.

Toss gently to combine all the ingredients.

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
