  • 1 can Cannellini beans
  • 1 small Red onion
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/4 cup Fresh parsley
  • 1/4 cup Fresh basil
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 clove Garlic
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse and drain the cannellini beans.
  2. Finely chop the red onion, cucumber, cherry tomatoes, olives, parsley, and basil.
  3. In a large bowl, combine the beans, chopped vegetables, and herbs.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and black pepper.
  5. Pour the dressing over the bean mixture and toss to combine.
