  1. Heat coconut oil in a pan and sauté onion, garlic, and ginger until fragrant.
  2. Add cumin seeds, cinnamon stick, and cardamom pods and cook for another minute.
  3. Stir in turmeric powder and oats, and cook for 2-3 minutes.
  4. Pour in coconut milk and water, and season with salt.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes or until oats are cooked and mixture thickens.
  6. In a separate pan, toast cashews and raisins until golden.
  7. Serve the coconut oat pilaf garnished with toasted cashews, raisins, and fresh coriander.
