Coconut Muffins

Coconut is not actually a nut, but a fruit called a drupe.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, and shredded coconut.

In a separate bowl, mix together the coconut oil, coconut milk, maple syrup, vanilla extract, flaxseed meal, and water.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes.
