Rinse the lentils and set aside.

In a large pot, heat some oil over medium heat.

Add the onion, garlic, and ginger. Sauté until the onion is translucent.

Add the curry powder, turmeric powder, and cumin powder. Stir well.

Add the lentils, coconut milk, and vegetable stock. Bring to a boil.

Reduce heat and simmer for about 20-25 minutes, or until the lentils are cooked through.

Stir in lime juice, salt, and black pepper.

Serve hot, garnished with fresh cilantro.
