Chunky Lentil-Cashew Soup
Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes for their nutritional benefits.

Rinse the lentils and soak them in water for 15 minutes. Drain and set aside.

In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.

Add the soaked lentils, cashews, vegetable stock, cumin, turmeric, paprika, salt, and black pepper to the pot. Bring to a boil.

Reduce the heat to low and simmer for 30 minutes, or until the lentils are tender.

Using an immersion blender or a regular blender, blend half of the soup until smooth. Return to the pot.

Stir in the lemon juice and fresh cilantro.

Let the soup rest for 10 minutes before serving.
