  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Rinse the quinoa under cold water and cook according to package instructions. Let it cool.
  3. In a large mixing bowl, combine almond flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk together maple syrup, almond milk, coconut oil, and vanilla extract.
  5. Add the cooked quinoa to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  7. Fold in dried cranberries and chopped walnuts.
  8. Divide the batter evenly among the muffin cups.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
