  2. In a large bowl, combine the rolled oats, almonds, pecans, shredded coconut, ground ginger, cinnamon, cocoa powder, and salt.
  3. In a small saucepan, melt the coconut oil over low heat. Add the maple syrup, molasses, and vanilla extract. Stir until well combined.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the granola mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.
  7. Remove from the oven and let it cool completely.
  8. Once cooled, stir in the dark chocolate chips and dried cranberries.
  9. Store in an airtight container for up to 2 weeks.
